Darby Creeks Gourmet Zesty Tortilla Soup Mix
No Saturated Fat, No Cholesterol, No MSG, Gluten Free
Directions:
Bring 8 cups of water to a boil, add one 14.5oz can of diced tomatoes and this package of mix. At this time you may add cooked chicken of beef (one 10oz can of chicken meat may also be used). Simmer for 20 to 30 minutes until vegetables are tender. At this time add a 1/2 cup crushed tortilla chips (sodium levels may very with brand of tortilla chips used). Stir often.

For a less spicy soup add one additional can of diced tomatoes

Rating Zesty Tortilla Soup w/a Twist
 
I went to the Wisconsin State Fair and tried a sample of this and it was good. I reduced the water to 4-1/2c of water and added 3 cans of creamy tomato soup, can of corn, can of diced tomato, can of green chiles, 2 cans of white chicken, a palm full of mexican shredded cheese and a palm full of tortilla strips crushed. Let simmer 45mins. Add cheese, sourcream, tortilla strips to taste and Enjoy!

This soup is a standard in our home. I make a pot any time we have out of town company coming in. I also make a pot the day we arrive at our vacation destination and it serves as our lunch all week. I add fresh onions and celery for the crunch. The flavor is wonderful and it's guiltless!!! Thanks!

This is one of my favorites. The recipe is great as written, but lends itself well to many personal variations. I have added fresh corn (right at the end) and tomato paste, for thickness and crunch.

This soup is delicious. I added 2 cans of diced tomatoes with green chiles and added rotisserie chicken. I would definitely make it again.
